Naturally, when you’re on holiday at the coast, you want to enjoy delicious seafood! You don’t have to splurge on an expensive restaurant dinner to enjoy a delicious mussel pot! Check out this North Coast mussel pot recipe.
Ingredients –
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 2 teaspoons fresh garlic, crushed
- 1/2 teaspoon chili flakes
- 1 cup dry white wine
- 1 cup fresh cream (whipping cream)
- 450 grams mussels
- salt and black pepper, to taste
- 1 lemon, juice and zest
- 1/2 cup parsley, chopped
Instructions –
Melt the butter in a large pot (with a lid), add the onion, garlic and chili flakes and sauté until soft.
Add the white wine and simmer until reduced by two thirds. Add the cream and simmer for 2 – 3 minutes.
Add the mussels and cover the pot. Steam over low heat until the mussels are cooked (about 8 – 10 minutes).
Remove from the heat, discard any unopened mussels, season to taste with salt and pepper, stir in the lemon juice, zest and parsley.
Serve and enjoy!
