Few things say “South African” quite like a boerewors roll! With the summer season in mind and easy-to-prepare, no-fuss holiday meals a must, we thought we’d share our Gourmet Boerie Roll recipe here, for your enjoyment.
(Makes 6)
Ingredients –
- Boerewors, approximately 700 g of your favourite wors
- 6 fresh hot dog rolls
- 1 Tbsp feta cheese crumbled
For the Carmelised Onions:
- 3 large onions, halved and finely sliced
- 1 garlic clove crushed
- 1 1/2 Tbsp sugar
- 1 Tbsp butter
- 1/2 Tbsp fresh thyme leaves (dried will do if you don’t have fresh)
For the Tomato Relish:
- 500 g cherry tomatoes, halved
- 1 clove garlic crushed
- 2 Tbsp extra virgin olive oil
- 2 Tbsp balsamic reduction
- 1 tsp fresh thyme leaves (as above, but fresh is better)
- Freshly ground salt and pepper
Directions –
For the Tomato Relish:
Add the halved cherry tomatoes, crushed garlic, thyme leaves, olive oil and balsamic reduction to a baking tray and toss together. Spread the tomatoes out in a single layer on the tray and sprinkle with salt and pepper. Place in a preheated oven at 180°C and roast for approximately 30 minutes, or until the tomatoes are soft and juicy. Remove from oven and set aside.
For the Carmelised Onions:
While the tomatoes are roasting in the oven, heat the butter in a pan. Add the crushed garlic, sliced onions, sugar and thyme. Stir through well to ensure the onions are well coated in butter. Put a lid on the pan and cook, over a medium heat for around 20-30 minutes, checking on them and stirring regularly. The onions should be soft and golden brown once cooked.
For the Boerewors:
Braai as per usual – we all have our favourite braai techniques!
Once cooked, remove from braai and cut into 6 portions.
To Assemble the Boerie Rolls –
Cut the hotdog rolls, lengthways, down the center of each roll, making sure not to cut them all the way through.
Fill with a layer of caramelised onions and tomato relish, then nestle the boerewors into the relish and sprinkle with the crumbled feta cheese.
Serve immediately while warm.
